Description

Crispy baked taquitos filled with black beans, corn, and spices, perfect for a cozy family dinner.


Ingredients

  • 1 can black beans, drained and rinsed
  • 1 cup corn
  • 1 red bell pepper, diced
  • 1/2 onion, diced
  • 1 clove garlic, minced
  • 1 lime, juiced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 8 small tortillas
  • Olive oil spray

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine black beans, corn, red bell pepper, onion, garlic, lime juice, cumin, chili powder, salt, and pepper. Stir until mixed.
  3. Place a portion of filling onto each tortilla and roll them up tightly.
  4. Place the taquitos seam-side down on a baking sheet lined with parchment paper.
  5. Lightly spray the taquitos with olive oil.
  6. Bake for 20-25 minutes or until golden brown and crispy.
  7. Serve hot with your favorite dipping sauce.

Notes

Make-ahead filling can be stored in the fridge. Leftovers can be kept for up to three days.
