Ingredients

- 1 can black beans, drained and rinsed
- 1 cup corn
- 1 red bell pepper, diced
- 1/2 onion, diced
- 1 clove garlic, minced
- 1 lime, juiced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- 8 small tortillas
- Olive oil spray
Instructions
- Preheat your oven to 400°F (200°C).
- In a mixing bowl, combine black beans, corn, red bell pepper, onion, garlic, lime juice, cumin, chili powder, salt, and pepper. Stir until mixed.
- Place a portion of filling onto each tortilla and roll them up tightly.
- Place the taquitos seam-side down on a baking sheet lined with parchment paper.
- Lightly spray the taquitos with olive oil.
- Bake for 20-25 minutes or until golden brown and crispy.
- Serve hot with your favorite dipping sauce.
Notes
Make-ahead filling can be stored in the fridge. Leftovers can be kept for up to three days.
