Description

A comforting baked oatmeal muffin, perfect for busy mornings or cozy snack times.


Ingredients

Scale
  • 1/2 banana
  • 1/2 cup oats
  • 1/2 cup plant milk
  • 1 tablespoon maple syrup
  • 1 tablespoon chia seeds
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 tablespoon coconut sugar
  • 1 teaspoon cinnamon

Instructions

  1. Preheat your oven to 400°F.
  2. Add the banana, oats, plant milk, maple syrup, chia seeds, vanilla extract, baking powder, coconut sugar, and cinnamon to a blender.
  3. Blend on high until completely smooth and creamy.
  4. Pour the blended mixture into an oven-safe baking ramekin.
  5. Bake for 20-25 minutes, or until golden brown and a toothpick comes out clean.
  6. Remove from the oven and garnish with cinnamon and coconut sugar.
  7. Allow to cool for a few moments before enjoying.

Notes

Make-ahead by blending ingredients the night before and baking fresh in the morning.
