Description

A comforting dish featuring tender chicken breasts baked with creamy mozzarella, fresh cherry tomatoes, and a rich balsamic sauce.


Ingredients

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 1/4 cup balsamic vinegar
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 2 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup shredded mozzarella cheese
  • Fresh basil or parsley for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly grease a baking dish with olive oil.
  2. Season the chicken breasts generously with salt and pepper on both sides.
  3. In a small bowl, whisk together balsamic vinegar, honey or maple syrup, dried basil, oregano, and minced garlic.
  4. In a large skillet, heat 1 tablespoon olive oil over medium-high heat, then sear the chicken for 2–3 minutes on each side.
  5. Place the seared chicken in a baking dish, pour the balsamic mixture over the chicken, and scatter halved cherry tomatoes around.
  6. Bake for 20–25 minutes until chicken juices run clear.
  7. Sprinkle mozzarella over the chicken and return to oven for another 5–10 minutes until cheese is bubbly and chicken is fully cooked.
  8. Garnish with fresh basil or parsley and serve warm.

Notes

Marinate chicken in balsamic mixture for extra flavor. Store leftovers in an airtight container for up to 3 days.
