- 2 ripe bananas, mashed
- 1 cup all-purpose flour
- 1/2 cup rolled oats
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1/2 cup mini chocolate chips
- 1/2 cup mini marshmallows
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/3 cup vegetable oil
- 1 large egg
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- Mix together the mashed bananas, vegetable oil, egg, and vanilla extract until creamy.
- Combine the flour, oats, brown sugar, granulated sugar, baking soda, baking powder, and salt in another bowl.
- Add the dry ingredients to the banana mixture, stirring gently until just combined.
- Fold in the chocolate chips and mini marshmallows.
- Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Allow the muffins to cool for a few minutes in the tin before transferring to a wire rack to cool completely.

These muffins can be made ahead of time and stored in an airtight container for up to a week.
