A quick and wholesome beef stir fry packed with colorful vegetables, perfect for busy weeknights.

- 1 pound beef (sliced thinly)
- 2 cups mixed vegetables (like bell peppers, broccoli, and carrots)
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon corn starch
- 2 tablespoons vegetable oil
- 1 garlic clove (minced)
- 1 teaspoon ginger (grated)
- Salt and pepper to taste
- Cooked rice or noodles for serving
Instructions
- Combine the sliced beef with soy sauce, oyster sauce, and corn starch in a bowl. Toss to coat and marinate for 15-30 minutes.
- Heat vegetable oil in a large pan or wok over medium-high heat until shimmering.
- Add the marinated beef to the hot pan and stir-fry for 3-5 minutes until browned. Remove beef and set aside.
- In the same pan, add minced garlic and grated ginger. Stir until fragrant, then toss in mixed vegetables. Stir-fry for about 3-4 minutes until tender-crisp.
- Return the beef to the pan, stirring to combine, and cook for a final 2 minutes.
- Season with salt and pepper to taste.
- Serve over warm rice or noodles.
Notes
Marinate beef ahead of time for richer flavor. Mix and match vegetables as desired.
