- 2 cups rolled oats
- 1 cup mashed ripe bananas (approximately 2 medium bananas)
- 1/4 cup honey or maple syrup
- 1/2 cup almond milk (or any milk of your choice)
- 1 teaspoon vanilla extract
- 1 cup fresh or frozen blueberries
- 1/2 teaspoon baking powder
- 1/2 teaspoon cinnamon
- A pinch of salt
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper for easy removal.
- Combine rolled oats, baking powder, cinnamon, and salt in a large mixing bowl. Give it a gentle stir to blend the dry ingredients.
- Whisk together the mashed bananas, almond milk, honey (or maple syrup), and vanilla extract until creamy and smooth in another bowl.
- Pour the wet mixture into the dry ingredients and stir until well combined. Be sure to fold in those luscious blueberries!
- Transfer the mixture into the prepared baking pan, smoothing it out until it’s even.
- Bake in the preheated oven for about 25-30 minutes, or until the top is golden brown and a toothpick comes out clean.
- Allow the bars to cool in the pan for about 10 minutes, then lift them out using the parchment paper and let them cool completely on a wire rack.
- Once cool, slice into bars and enjoy the warm, comforting goodness!
