Description

Delightful and wholesome breakfast bars packed with oats and juicy blueberries, perfect for cozy mornings.


Ingredients

  • 2 cups rolled oats
  • 1 cup mashed ripe bananas (approximately 2 medium bananas)
  • 1/4 cup honey or maple syrup
  • 1/2 cup almond milk (or any milk of your choice)
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen blueberries
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • A pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper for easy removal.
  2. Combine rolled oats, baking powder, cinnamon, and salt in a large mixing bowl. Give it a gentle stir to blend the dry ingredients.
  3. Whisk together the mashed bananas, almond milk, honey (or maple syrup), and vanilla extract until creamy and smooth in another bowl.
  4. Pour the wet mixture into the dry ingredients and stir until well combined. Be sure to fold in those luscious blueberries!
  5. Transfer the mixture into the prepared baking pan, smoothing it out until it’s even.
  6. Bake in the preheated oven for about 25-30 minutes, or until the top is golden brown and a toothpick comes out clean.
  7. Allow the bars to cool in the pan for about 10 minutes, then lift them out using the parchment paper and let them cool completely on a wire rack.
  8. Once cool, slice into bars and enjoy the warm, comforting goodness!
