Description

Delightful cookies combining the flavors of Boston Cream Pie, featuring soft cookies with a creamy vanilla filling and rich chocolate glaze.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup heavy cream
  • 2 tablespoons cornstarch
  • 1/4 cup powdered sugar
  • 1 cup semisweet chocolate chips
  • 1 tablespoon vegetable oil

Instructions

  1. Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Cream together the butter and sugar until light and fluffy, about 2-3 minutes. Beat in the eggs one at a time, then stir in the vanilla extract.
  3. In another bowl, whisk together the flour, baking powder, and salt. Gradually add this mixture to the butter mixture until just combined.
  4. Drop tablespoon-sized balls of dough onto the baking sheets, leaving space for spreading. Bake for 12-15 minutes, or until edges turn lightly golden. Cool completely on a wire rack.
  5. In a saucepan, heat the heavy cream until it simmers. Whisk together cornstarch and powdered sugar, then pour the hot cream over, whisking continuously until smooth. Let cool to room temperature.
  6. Spread vanilla cream filling on half of the cooled cookies and top with the remaining cookies to create sandwiches.
  7. In a microwave-safe bowl, combine chocolate chips and vegetable oil. Heat in 30-second intervals until smooth. Drizzle or dip cookies into the chocolate glaze and allow to set before serving.

Notes

Cookies can be stored in an airtight container in the refrigerator for up to a week. They can also be made ahead and frozen before adding filling and glaze.
