- 4 boneless, skinless chicken breasts or thighs
- 1 cup pineapple chunks (fresh or canned in juice)
- ½ cup brown sugar
- ¼ cup soy sauce
- 2 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 2 tbsp olive oil
- ½ tsp chili flakes (optional)
- 2 tbsp lime juice
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Preheat grill to medium heat. Combine brown sugar, soy sauce, garlic, ginger, olive oil, chili flakes, lime juice, salt, and pepper to make a marinade.
- Marinate chicken for 10-20 minutes.
- Grill chicken for 6-8 minutes on each side, basting with marinade. Grill pineapple slices for added flavor.
- For baking, preheat oven to 375°F (190°C) and bake the marinated chicken and pineapple for about 30 minutes.
- For slow cooking, combine chicken and pineapple in a slow cooker with marinade and cook on low for 4-5 hours.
- Garnish with fresh cilantro and serve with steamed rice or veggies.
Notes
Marinate the chicken overnight for deeper flavor. Substitute brown sugar with honey if needed.
