Description

A sweet and savory chicken dish marinated in brown sugar and pineapple, perfect for a cozy weeknight dinner.


Ingredients

  • 4 boneless, skinless chicken breasts or thighs
  • 1 cup pineapple chunks (fresh or canned in juice)
  • ½ cup brown sugar
  • ¼ cup soy sauce
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp olive oil
  • ½ tsp chili flakes (optional)
  • 2 tbsp lime juice
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Preheat grill to medium heat. Combine brown sugar, soy sauce, garlic, ginger, olive oil, chili flakes, lime juice, salt, and pepper to make a marinade.
  2. Marinate chicken for 10-20 minutes.
  3. Grill chicken for 6-8 minutes on each side, basting with marinade. Grill pineapple slices for added flavor.
  4. For baking, preheat oven to 375°F (190°C) and bake the marinated chicken and pineapple for about 30 minutes.
  5. For slow cooking, combine chicken and pineapple in a slow cooker with marinade and cook on low for 4-5 hours.
  6. Garnish with fresh cilantro and serve with steamed rice or veggies.

Notes

Marinate the chicken overnight for deeper flavor. Substitute brown sugar with honey if needed.
