Delicious and customizable sushi bowls featuring sushi rice, avocado, cucumber, and imitation crab.
Ingredients

- 2 cups sushi rice
- 2 1/2 cups water
- 1/4 cup rice vinegar
- 1 tablespoon sugar
- 1 teaspoon salt
- 1 avocado, sliced
- 1 cucumber, thinly sliced
- 1 carrot, grated
- 1/2 pound imitation crab meat, shredded
- 2 tablespoons soy sauce
- 1 tablespoon sesame seeds
- Seaweed sheets (nori), cut into strips
- Wasabi and pickled ginger (optional)
Instructions
- Rinse the sushi rice under cold water until the water runs clear. Combine the rice and water in a rice cooker and cook according to the manufacturer’s instructions.
- Combine the rice vinegar, sugar, and salt over low heat until dissolved in a small saucepan.
- Transfer the cooked rice to a large bowl and gently stir in the vinegar mixture. Allow it to cool slightly.
- Divide the warm sushi rice into serving bowls.
- Top each bowl with sliced avocado, cucumber, grated carrot, and shredded imitation crab meat.
- Drizzle with soy sauce and sprinkle sesame seeds on top.
- Serve with nori strips, wasabi, and pickled ginger on the side.
