Ingredients

  • 3 large eggs
  • 1 tablespoon chai spice blend (or a mix of cinnamon, ginger, cardamom, and clove)
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan, or line it with parchment paper.
  2. Cream together the softened butter and granulated sugar until light and fluffy for about 3-4 minutes.
  3. Add the eggs one at a time, mixing well after each, then stir in the buttermilk and vanilla extract.
  4. In a separate bowl, whisk together the flour, chai spice blend, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
  6. Pour the batter into the prepared baking pan and smooth the top.
  7. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
