- 1 lb white-meat chicken
- 2 cups tomatoes, diced
- 3 cloves garlic, minced
- 1 cup fresh basil, chopped
- 1 teaspoon Italian herbs
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Heat 2 tablespoons of olive oil in a skillet over medium heat.
- Season the chicken with salt and pepper.
- Add the chicken to the skillet and cook for about 5-7 minutes on each side until golden brown.
- Remove the chicken from the skillet and set aside.
- Add the minced garlic to the skillet and sauté for 1 minute.
- Add the diced tomatoes and Italian herbs; let simmer for about 5 minutes.
- Return the chicken to the skillet and add the chopped basil, stirring to combine.
- Cook for an additional 5 minutes before serving.
Notes
