Description

A quick and easy Chicken Pomodoro recipe featuring tender chicken and a vibrant tomato sauce, garnished with fresh basil. Perfect for a cozy weeknight dinner.


Ingredients

  • 1 lb white-meat chicken
  • 2 cups tomatoes, diced
  • 3 cloves garlic, minced
  • 1 cup fresh basil, chopped
  • 1 teaspoon Italian herbs
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat 2 tablespoons of olive oil in a skillet over medium heat.
  2. Season the chicken with salt and pepper.
  3. Add the chicken to the skillet and cook for about 5-7 minutes on each side until golden brown.
  4. Remove the chicken from the skillet and set aside.
  5. Add the minced garlic to the skillet and sauté for 1 minute.
  6. Add the diced tomatoes and Italian herbs; let simmer for about 5 minutes.
  7. Return the chicken to the skillet and add the chopped basil, stirring to combine.
  8. Cook for an additional 5 minutes before serving.

Notes

For added flavor, try mixing in crushed red pepper flakes or heavy cream. Store leftovers in an airtight container for up to three days.
