Description

A cozy weeknight dinner featuring juicy marinated steak, cilantro lime rice, black beans, and creamy avocado, drizzled with a delightful cilantro lime sauce.

Ingredients

Scale
  • 1 lb juicy steak (skirt or flank)
  • Juice of 2 limes
  • 1/4 cup fresh cilantro, chopped + more for garnish
  • Salt and pepper, to taste
  • 2 cups cooked rice (white or brown)
  • 1 can black beans, rinsed and drained
  • 1 cup corn (fresh, frozen, or canned)
  • 1 ripe avocado, sliced
  • 1/2 cup creamy cilantro lime sauce (store-bought or homemade)

Instructions

  1. Marinate the steak: In a bowl, combine lime juice, chopped cilantro, salt, and pepper. Add the steak, ensuring it is fully coated. Let it marinate for about 15-30 minutes.
  2. Cook the steak: Heat a grill pan or skillet over medium-high heat. Once hot, add the marinated steak and cook to your preferred doneness, about 4-5 minutes per side for medium-rare. Let it rest for a few minutes before slicing.
  3. Prepare cilantro lime rice: In a large bowl, mix the cooked rice with lime juice and chopped cilantro. Stir well until the rice is vibrant and fragrant.
  4. Assemble the bowl: Start with a generous layer of cilantro lime rice, then add black beans, corn, sliced avocado, and your perfectly cooked steak on top.
  5. Drizzle with creamy cilantro lime sauce: Finish it all off with a delicious drizzle of creamy cilantro lime sauce before serving.

Notes

Marinate the steak the night before for extra flavor. Slice against the grain for a tender bite.
