Description

A comforting blend of lime, cilantro, and marinated steak served in vibrant bowls filled with rice, beans, and fresh toppings.


Ingredients

  • 1 lb Steak (sirloin or flank)
  • ¼ cup Cilantro (chopped)
  • ¼ cup Lime juice (freshly squeezed)
  • 1 cup Rice (white or brown)
  • 1 can Black beans (canned or cooked)
  • 1 cup Corn (fresh, canned, or frozen)
  • 1 Avocado (sliced)
  • Creamy cilantro lime sauce (store-bought or homemade)
  • 2 tbsp Olive oil
  • Salt (to taste)
  • Pepper (to taste)

Instructions

  1. In a bowl, combine lime juice, chopped cilantro, olive oil, salt, and pepper to create the marinade. Add steak and marinate for at least 15 minutes.
  2. Cook rice according to package instructions. Fluff with forks and mix in chopped cilantro and a splash of lime juice.
  3. Preheat grill or skillet to medium-high heat. Grill or pan-sear marinated steak for about 4-5 minutes on each side for medium-rare. Let rest before slicing.
  4. Assemble bowls with cilantro lime rice at the bottom, followed by black beans, corn, sliced avocado, and sliced steak on top.
  5. Drizzle with creamy cilantro lime sauce and serve immediately.
