- 1 lb Steak (sirloin or flank)
- ¼ cup Cilantro (chopped)
- ¼ cup Lime juice (freshly squeezed)
- 1 cup Rice (white or brown)
- 1 can Black beans (canned or cooked)
- 1 cup Corn (fresh, canned, or frozen)
- 1 Avocado (sliced)
- Creamy cilantro lime sauce (store-bought or homemade)
- 2 tbsp Olive oil
- Salt (to taste)
- Pepper (to taste)
Instructions
- In a bowl, combine lime juice, chopped cilantro, olive oil, salt, and pepper to create the marinade. Add steak and marinate for at least 15 minutes.
- Cook rice according to package instructions. Fluff with forks and mix in chopped cilantro and a splash of lime juice.
- Preheat grill or skillet to medium-high heat. Grill or pan-sear marinated steak for about 4-5 minutes on each side for medium-rare. Let rest before slicing.
- Assemble bowls with cilantro lime rice at the bottom, followed by black beans, corn, sliced avocado, and sliced steak on top.
- Drizzle with creamy cilantro lime sauce and serve immediately.
