- 1 lb chicken breast, diced
- 1 cup jasmine rice
- 1 can (14 oz) coconut milk
- 4 cups chicken broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 2 carrots, sliced
- 1 red bell pepper, chopped
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a large pot, heat some oil over medium heat. Add the chopped onion, garlic, and ginger, and sauté until fragrant.
- Add the diced chicken and cook until browned.
- Stir in the rice and allow it to absorb the flavors for another minute.
- Pour in the coconut milk and chicken broth, then add the carrots and bell pepper.
- Bring to a boil, then reduce heat to simmer. Cover and cook for about 20 minutes, or until rice is tender.
- Season with salt and pepper to taste and garnish with fresh cilantro before serving.
Notes
Prepare ingredients beforehand for a smoother cooking process. Leftovers can be stored in an airtight container in the fridge for up to 3 days.
