Description

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup shredded coconut
  • 1/2 cup crushed pineapple (drained)
  • 1/4 cup sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 eggs
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a muffin tin.
  2. Combine cottage cheese, eggs, vegetable oil, and vanilla extract in a mixing bowl, stirring until smooth.
  3. Mix together flour, sugar, baking powder, baking soda, salt, shredded coconut, and crushed pineapple in another bowl.
  4. Fold the wet ingredients into the dry ingredients until just combined; avoid overmixing.
  5. Fill the muffin tin with the batter, about 3/4 full, and bake for 20-25 minutes or until a toothpick comes out clean.
  6. Allow to cool slightly before serving warm.
