- 1 cup yellow cornmeal
- 1/2 cup all-purpose flour
- 1/4 cup sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup milk
- 1/4 cup melted butter
- 2 tbsp honey
- 1 egg
- 1/2 cup corn kernels
- For the Honey Butter Glaze:
- 1/4 cup melted butter
- 2 tbsp honey
Instructions
- Preheat your oven to 375°F (190°C) and grease a mini muffin tin.
- In a large mixing bowl, combine the yellow cornmeal, all-purpose flour, sugar, baking powder, and salt.
- In another bowl, whisk together the milk, melted butter, honey, and egg.
- Gently pour the wet ingredients into the dry mixture and fold in the corn kernels.
- Fill each muffin cup about three-quarters full with the batter.
- Bake for 12-15 minutes, or until golden brown.
- Prepare the honey butter glaze by mixing the melted butter and honey.
- Brush the warm poppers with the honey butter glaze before serving.
Notes
These cornbread poppers can be customized with different mix-ins like cheese or jalapeños. They are best enjoyed fresh, but can be stored in an airtight container for up to three days.
