Description

Delightful mini cornbread poppers that are perfect for snacking or as an accompaniment to soups and stews, with a sweet honey butter glaze.


Ingredients

  • 1 cup yellow cornmeal
  • 1/2 cup all-purpose flour
  • 1/4 cup sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup milk
  • 1/4 cup melted butter
  • 2 tbsp honey
  • 1 egg
  • 1/2 cup corn kernels
  • For the Honey Butter Glaze:
  • 1/4 cup melted butter
  • 2 tbsp honey

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a mini muffin tin.
  2. In a large mixing bowl, combine the yellow cornmeal, all-purpose flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together the milk, melted butter, honey, and egg.
  4. Gently pour the wet ingredients into the dry mixture and fold in the corn kernels.
  5. Fill each muffin cup about three-quarters full with the batter.
  6. Bake for 12-15 minutes, or until golden brown.
  7. Prepare the honey butter glaze by mixing the melted butter and honey.
  8. Brush the warm poppers with the honey butter glaze before serving.

Notes

These cornbread poppers can be customized with different mix-ins like cheese or jalapeños. They are best enjoyed fresh, but can be stored in an airtight container for up to three days.
