- 2 chicken breasts
- 2 large onions, thinly sliced
- 2 cups rice
- 4 cups chicken broth
- 1 cup heavy cream
- 1 tablespoon garlic powder
- 1 teaspoon thyme
- Salt and pepper to taste
- Olive oil for cooking
- Grated cheese for topping (optional)
Instructions
- Heat a drizzle of olive oil in a large pot over medium heat. Add the sliced onions and sauté until golden brown, about 10-15 minutes.
- Push the caramelized onions to the side and add the chicken breasts, cooking until browned on both sides, about 4-5 minutes.
- Sprinkle in the garlic powder, thyme, salt, and pepper, stirring to combine with the chicken and onions.
- Add the rice and pour in the chicken broth. Bring to a vigorous boil.
- Once boiling, reduce heat to low, cover, and simmer for about 20 minutes until the rice is tender.
- Stir in the heavy cream and let simmer for an additional 5 minutes.
- Serve hot, topped with grated cheese if desired.

Make ahead and reheat gently; can substitute heavy cream with half-and-half or milk.
