Description

A comforting one-pot dish featuring tender chicken, caramelized onions, and creamy rice, perfect for busy weeknight dinners.


Ingredients

  • 2 chicken breasts
  • 2 large onions, thinly sliced
  • 2 cups rice
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 tablespoon garlic powder
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • Olive oil for cooking
  • Grated cheese for topping (optional)

Instructions

  1. Heat a drizzle of olive oil in a large pot over medium heat. Add the sliced onions and sauté until golden brown, about 10-15 minutes.
  2. Push the caramelized onions to the side and add the chicken breasts, cooking until browned on both sides, about 4-5 minutes.
  3. Sprinkle in the garlic powder, thyme, salt, and pepper, stirring to combine with the chicken and onions.
  4. Add the rice and pour in the chicken broth. Bring to a vigorous boil.
  5. Once boiling, reduce heat to low, cover, and simmer for about 20 minutes until the rice is tender.
  6. Stir in the heavy cream and let simmer for an additional 5 minutes.
  7. Serve hot, topped with grated cheese if desired.

Notes

Make ahead and reheat gently; can substitute heavy cream with half-and-half or milk.
