Description

A delightful twist on traditional crème brûlée, these cookies feature a crunchy caramelized top and creamy vanilla filling, perfect for any occasion.


Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup heavy cream
  • 2 egg yolks
  • 1/4 cup granulated sugar (for caramelizing)

Instructions

  1. Preheat the oven to 350°F (175°C). Whisk together flour, baking soda, and salt until well combined.
  2. Cream together the butter, granulated sugar, and brown sugar until light and fluffy. Beat in the egg and vanilla extract.
  3. Gradually add the dry ingredients to the wet mixture until just combined.
  4. Scoop cookie dough onto a baking sheet lined with parchment paper. Bake for 10-12 minutes until edges are golden.
  5. While cooling, heat the heavy cream in a saucepan until it simmers.
  6. Whisk egg yolks and granulated sugar until smooth, then gradually mix in the hot cream. Return to heat and stir until thickened.
  7. Fill each cooled cookie with the vanilla pastry cream and sprinkle with granulated sugar. Use a kitchen torch to caramelize the sugar.
  8. Let cool before serving.

Notes

For best results, caramelize the sugar topping just before serving. You can make the pastry cream a day ahead and store it in the refrigerator.
