- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup heavy cream
- 2 egg yolks
- 1/4 cup granulated sugar (for caramelizing)
Instructions
- Preheat the oven to 350°F (175°C). Whisk together flour, baking soda, and salt until well combined.
- Cream together the butter, granulated sugar, and brown sugar until light and fluffy. Beat in the egg and vanilla extract.
- Gradually add the dry ingredients to the wet mixture until just combined.
- Scoop cookie dough onto a baking sheet lined with parchment paper. Bake for 10-12 minutes until edges are golden.
- While cooling, heat the heavy cream in a saucepan until it simmers.
- Whisk egg yolks and granulated sugar until smooth, then gradually mix in the hot cream. Return to heat and stir until thickened.
- Fill each cooled cookie with the vanilla pastry cream and sprinkle with granulated sugar. Use a kitchen torch to caramelize the sugar.
- Let cool before serving.
Notes
For best results, caramelize the sugar topping just before serving. You can make the pastry cream a day ahead and store it in the refrigerator.
