Ingredients

  • 4 bone-in, skin-on chicken thighs
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Pat the chicken thighs dry with paper towels, ensuring that the skin gets nice and crispy.
  3. Mix the olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper until well combined.
  4. Rub the seasoning mixture all over the chicken thighs, making sure to get under the skin for that extra flavor.
  5. Place the chicken thighs on a baking sheet, skin side up, leaving a little space between them for even cooking.
  6. Bake in the preheated oven for 35-40 minutes or until the chicken is cooked through and the skin is beautifully crispy.
  7. Let rest for a few minutes before serving to lock in the juices.
  8. Garnish with fresh herbs if desired to add a pop of color and flavor.
