Description

A delightful, comforting skillet dish featuring crispy bacon and tender potatoes, perfect for breakfast or dinner.


Ingredients

  • 1 1/2 lbs Yukon Gold or red potatoes, scrubbed and diced
  • 8 oz thick-cut Irish bacon, chopped
  • 1 large yellow onion, thinly sliced
  • 2 tablespoons butter
  • 2 tablespoons fresh parsley, chopped
  • 1/2 teaspoon sea salt, or to taste
  • 1/4 teaspoon freshly cracked black pepper
  • Optional: 1/2 teaspoon garlic powder or 1 clove garlic, minced
  • Optional: 1/4 teaspoon smoked paprika

Instructions

  1. Start by scrubbing and dicing the potatoes into 1/2-inch cubes. Thinly slice the onion and chop the bacon into bite-sized pieces. Chop the parsley and measure out the butter and seasonings.
  2. Heat a large skillet over medium heat. Add the chopped bacon and cook, stirring occasionally, until golden brown and crispy (about 6-8 minutes).
  3. Push the bacon to one side of the skillet. Add the sliced onions and a pinch of salt. Sauté until softened and lightly golden (about 2-3 minutes).
  4. Stir in the diced potatoes, and sprinkle with sea salt, black pepper, and optional garlic powder and smoked paprika. Toss everything to coat well.
  5. Spread the potatoes and bacon into an even layer. Cook undisturbed for 4-5 minutes to develop a golden crust. Flip with a spatula, then continue cooking until fork-tender and crispy all over (10-15 minutes).
  6. For extra crunch, dot the top with remaining butter and broil for 2-3 minutes, or crisp on stovetop for another 2-3 minutes.
  7. Sprinkle with fresh parsley, taste, and adjust salt or pepper as needed. Serve hot.

Notes

Feel free to customize with different veggies or add cheese for a creamy twist. Prepping ingredients the night before can save time.
