Ingredients

  • 34 lbs corned beef brisket
  • 1 small head of cabbage, chopped
  • 4 large carrots, peeled and cut into chunks
  • 45 medium potatoes, cut into quarters
  • 4 cups of beef broth or water
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 2 teaspoons of mustard seeds (optional)
  • Salt and pepper to taste

Instructions

  1. Place the corned beef brisket in the bottom of the crock pot.
  2. Pour in the beef broth or water, ensuring the brisket is well covered.
  3. Add the chopped onion, minced garlic, and mustard seeds if using.
  4. Arrange the potatoes and carrots around the brisket.
  5. Cover and cook on low for 8-10 hours, or until the meat is tender.
  6. Add the chopped cabbage in the last hour of cooking.
  7. Season with salt and pepper to taste before serving.
