Description

Ingredients

  • 1 can black beans, rinsed and drained
  • 1 can diced tomatoes
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 2 cups vegetable broth

  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. In a crock pot, combine sweet potatoes, black beans, diced tomatoes, onion, garlic, bell pepper, and vegetable broth.
  2. Add cumin, chili powder, salt, and pepper.

  4. Cover and cook on low for 360 minutes (6-8 hours) or on high for 240 minutes (3-4 hours).
