- 1 lb boneless chicken breast
- 6 cups chicken broth
- 1 cup orzo pasta
- 2 carrots, diced
- 2 celery stalks, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 lemons, juiced
- 1/4 cup fresh dill, chopped
- Salt and pepper to taste
- Olive oil
Instructions
- In a large pot, heat olive oil over medium heat. Add the onion, garlic, carrots, and celery, sautéing until softened and fragrant.
- Add the boneless chicken breast and pour in the chicken broth. Bring it all to a rolling boil.
- Once boiling, reduce the heat and simmer for about 20 minutes, or until the chicken is cooked through.
- Remove the chicken from the pot. Allow it to cool slightly, then shred it into bite-sized pieces and return it to the pot.
- Stir in the orzo pasta and let it cook until al dente, usually about 8-10 minutes.
- Add the freshly squeezed lemon juice, chopped dill, and season with salt and pepper to taste.
- Serve hot, garnished with an extra sprinkle of dill if desired, and enjoy the warm, comforting flavors!
