Ingredients
Scale
- 1 pound flank steak, sliced thinly against the grain
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon ground cumin
- Salt and pepper to taste
- 2 cups cooked quinoa or brown rice
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 bell pepper, diced (any color you prefer)
- 1 cup spinach or mixed greens
- Feta cheese, crumbled (optional)

Instructions
- Marinate the steak by combining olive oil, garlic, oregano, cumin, salt, and pepper in a bowl. Add the steak and let it sit for at least 15 minutes.
- Prepare the quinoa or brown rice according to package instructions until fluffy.
- Heat a skillet over medium-high heat and add the marinated steak. Sear for 3-4 minutes per side.
- Chop the fresh vegetables: cherry tomatoes, cucumber, and bell pepper.
- Let the steak rest for a few minutes, then slice thinly.
- Assemble the bowls with quinoa or brown rice, fresh veggies, and sliced steak. Top with feta cheese and drizzle with tzatziki.
Notes
Marinate the steak a day in advance for maximum flavor. Store leftovers in an airtight container for up to 3 days, keeping tzatziki separate.
