Ingredients

  • 1 pound flank steak, sliced thinly against the grain
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • 2 cups cooked quinoa or brown rice
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced (any color you prefer)
  • 1 cup spinach or mixed greens
  • Feta cheese, crumbled (optional)
  • Tzatziki sauce for drizzling

Instructions

  1. Marinate the steak by combining olive oil, garlic, oregano, cumin, salt, and pepper in a bowl. Add the steak and let it sit for at least 15 minutes.
  2. Prepare the quinoa or brown rice according to package instructions until fluffy.
  3. Heat a skillet over medium-high heat and add the marinated steak. Sear for 3-4 minutes per side.
  4. Chop the fresh vegetables: cherry tomatoes, cucumber, and bell pepper.
  5. Let the steak rest for a few minutes, then slice thinly.
  6. Assemble the bowls with quinoa or brown rice, fresh veggies, and sliced steak. Top with feta cheese and drizzle with tzatziki.
