- 4 chicken breasts
- 1 cup mushrooms, chopped
- 1/2 cup cream cheese, softened
- 1/2 cup shredded mozzarella cheese
- 2 cloves garlic, minced
- 1/2 onion, finely chopped
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat. Add onions and garlic, sautéing until translucent and fragrant.
- Add the chopped mushrooms to the skillet and cook until tender.
- Combine the cooked mushroom mixture with softened cream cheese and shredded mozzarella. Season with salt and pepper.
- Carefully cut a pocket in each chicken breast and stuff with the creamy mushroom mixture.
- Place the stuffed chicken breasts in a baking dish and season the tops with salt and pepper.
- Bake for 25-30 minutes, or until cooked through and reaches an internal temperature of 165°F (74°C).
- Garnish with freshly chopped parsley before serving.
Notes
Make the filling ahead of time and store it in the fridge for up to 24 hours. Substitute chicken with turkey or portobello mushrooms for a vegetarian option.
