- 1½ lbs sirloin steak, cut into bite-sized cubes
- 1½ lbs baby potatoes, halved or quartered
- 4 tablespoons olive oil (divided)
- 4 tablespoons butter
- 5–6 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon dried Italian herbs
- Salt and black pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Heat 2 tablespoons olive oil in a large skillet over medium heat. Add the halved baby potatoes, seasoning them with salt, pepper, and paprika. Cook until golden and fork-tender—about 15 minutes—stirring occasionally. Once done, remove the potatoes and set them aside.
- Season your sirloin steak cubes with salt, pepper, and dried Italian herbs. In the same skillet, add 1 tablespoon of olive oil and 2 tablespoons of butter.
- Sear the steak in a single layer, working in batches if needed, for 2–3 minutes per side until nicely browned. Be careful not to overcook; a little pink in the center keeps the steak juicy!
- Reduce the heat to medium-low. Add the remaining 2 tablespoons of butter and minced garlic. Sauté until fragrant—about 1 minute.
- Return the cooked potatoes to the pan, tossing everything together until it’s heated through—1 to 2 more minutes should do the trick.
- Garnish with fresh parsley and serve hot. Enjoy every comforting bite!
Notes
For meal prep, cook a larger batch of steak and potatoes, then refrigerate for later. Reheat in a skillet. If using regular potatoes, chop them into smaller pieces for even cooking.
