Description

Juicy sirloin steak bites mingling with tender baby potatoes, all sautéed in garlicky butter for a comforting meal.


Ingredients

  • lbs sirloin steak, cut into bite-sized cubes
  • lbs baby potatoes, halved or quartered
  • 4 tablespoons olive oil (divided)
  • 4 tablespoons butter
  • 56 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon dried Italian herbs
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat 2 tablespoons olive oil in a large skillet over medium heat. Add the halved baby potatoes, seasoning them with salt, pepper, and paprika. Cook until golden and fork-tender—about 15 minutes—stirring occasionally. Once done, remove the potatoes and set them aside.
  2. Season your sirloin steak cubes with salt, pepper, and dried Italian herbs. In the same skillet, add 1 tablespoon of olive oil and 2 tablespoons of butter.
  3. Sear the steak in a single layer, working in batches if needed, for 2–3 minutes per side until nicely browned. Be careful not to overcook; a little pink in the center keeps the steak juicy!
  4. Reduce the heat to medium-low. Add the remaining 2 tablespoons of butter and minced garlic. Sauté until fragrant—about 1 minute.
  5. Return the cooked potatoes to the pan, tossing everything together until it’s heated through—1 to 2 more minutes should do the trick.
  6. Garnish with fresh parsley and serve hot. Enjoy every comforting bite!

Notes

For meal prep, cook a larger batch of steak and potatoes, then refrigerate for later. Reheat in a skillet. If using regular potatoes, chop them into smaller pieces for even cooking.
