- 2 chicken breasts, diced
- 1 cup mushrooms, sliced
- 4 cups chicken broth
- 1 tablespoon fresh ginger, minced
- 2 cloves garlic, minced
- 1 lime, juiced
- 1 cup cilantro, chopped
- 1 cup rice
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat. Add ginger and garlic, sautéing until fragrant.
- Add diced chicken and cook until browned.
- Stir in mushrooms and cook until they start to soften.
- Pour in chicken broth and lime juice. Bring to a gentle simmer for 15-20 minutes.
- Cook the rice according to package instructions.
- Once the rice is done, stir in the chopped cilantro.
- Taste the soup and season with salt and pepper as needed.
- Serve hot, garnished with cilantro rice.
