Description

Ingredients

  • 2 chicken breasts, diced
  • 1 cup mushrooms, sliced
  • 4 cups chicken broth
  • 1 tablespoon fresh ginger, minced
  • 2 cloves garlic, minced
  • 1 lime, juiced
  • 1 cup cilantro, chopped
  • 1 cup rice
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add ginger and garlic, sautéing until fragrant.
  2. Add diced chicken and cook until browned.
  3. Stir in mushrooms and cook until they start to soften.
  4. Pour in chicken broth and lime juice. Bring to a gentle simmer for 15-20 minutes.
  5. Cook the rice according to package instructions.
  6. Once the rice is done, stir in the chopped cilantro.
  7. Taste the soup and season with salt and pepper as needed.
  8. Serve hot, garnished with cilantro rice.
