Description

Ingredients

  • 8 ounces cream cheese, softened
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1/2 cup almond flour
  • 1/4 cup gluten-free graham cracker crumbs
  • 2 tablespoons melted butter

Instructions

  1. Preheat your oven to 325°F (160°C). Grease a muffin tin or line it with cupcake liners.
  2. Mix the softened cream cheese, sugar, and vanilla until smooth.
  3. Add the eggs one at a time, mixing until fully incorporated.
  4. Stir in the almond flour and gluten-free graham cracker crumbs until fully combined.
  5. Divide the cheesecake batter evenly into the muffin tins, filling each cup about 3/4 of the way full.
  6. Bake for about 20 minutes, or until the cheesecakes are set and have a slight jiggle in the center.
  7. Let them cool before carefully removing them from the tin. Serve chilled and enjoy!
