Instructions
- Preheat your oven to 325°F (160°C). Grease a muffin tin or line it with cupcake liners.
- Mix the softened cream cheese, sugar, and vanilla until smooth.
- Add the eggs one at a time, mixing until fully incorporated.
- Stir in the almond flour and gluten-free graham cracker crumbs until fully combined.
- Divide the cheesecake batter evenly into the muffin tins, filling each cup about 3/4 of the way full.
- Bake for about 20 minutes, or until the cheesecakes are set and have a slight jiggle in the center.
- Let them cool before carefully removing them from the tin. Serve chilled and enjoy!
