- 2 boneless, skinless chicken breasts
- 1 cup cooked rice or quinoa
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 red onion, thinly sliced
- 1 bell pepper, diced
- 1/4 cup feta cheese, crumbled
- 1 cup tzatziki sauce
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 1 tsp garlic powder
- 1 tsp oregano
- Salt and pepper to taste
Instructions
- Mix together olive oil, lemon juice, garlic powder, oregano, salt, and pepper in a bowl.
- Add the chicken breasts to the marinade and coat thoroughly.
- Allow the chicken to marinate for at least 30 minutes.
- Heat your grill or pan over medium heat and grill or pan-fry the chicken for about 6-7 minutes per side until cooked through.
- Let the chicken rest for a few minutes before slicing it.
- Layer in serving bowls with rice or quinoa, grilled chicken, cherry tomatoes, cucumber, red onion, bell pepper, and sprinkle with feta cheese.
- Drizzle with tzatziki sauce just before serving.
- Customize with extra toppings like olives or avocado if desired.
