A comforting grilled steak bowl featuring tender steak, vibrant grilled zucchini, and a creamy herb sauce, perfect for weeknight dinners.


Ingredients

  • 1 pound Flank, Ribeye, or New York Strip
  • 2 medium Zucchini
  • 2 tablespoons Olive Oil
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1 tablespoon Dijon Mustard (optional)
  • 1 cup Sour Cream or Greek Yogurt
  • 2 tablespoons Fresh Herbs (Chives or Parsley)
  • 2 cups Cooked Rice or Mashed Potatoes

Instructions

  1. Preheat your grill or grill pan over medium-high heat.
  2. Rub the steak with olive oil, then sprinkle with garlic powder, onion powder, salt, and pepper.
  3. Slice the zucchini and toss in olive oil, salt, and pepper.
  4. Grill the steak for 4-5 minutes on each side and zucchini for 3-4 minutes per side until tender.
  5. In a bowl, mix sour cream or Greek yogurt, dijon mustard (if using), and fresh herbs to make the sauce.
  6. Remove steak from the grill, let it rest, then slice against the grain.
  7. Assemble bowls starting with rice or mashed potatoes, topped with zucchini, steak, and herb sauce.
