- 1 lb lean ground beef (93% preferred)
- 2 medium sweet potatoes, peeled and diced
- 1 avocado, sliced
- 1 cup cottage cheese (low-fat or full-fat)
- 1 yellow onion, diced
- 2 tbsp olive oil
- 1 taco seasoning packet (or 2 tbsp homemade)
- 2 tbsp hot honey
- 1/2 tsp paprika
- 1/2 tsp garlic powder
- 1/4 tsp cinnamon
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Toss the diced sweet potatoes with olive oil, paprika, garlic powder, cinnamon, salt, and pepper until well coated.
- Spread the sweet potatoes in a single layer on a baking sheet and roast for 40–45 minutes, or until tender and caramelized.
- While the sweet potatoes are roasting, heat the remaining olive oil in a skillet over medium heat. Add the diced onion and sauté until soft.
- Add the ground beef along with the taco seasoning to the skillet. Cook until browned, breaking it apart as it cooks.
- In serving bowls, layer the roasted sweet potatoes first, then top with the seasoned beef.
- Add avocado slices, cottage cheese, and a drizzle of hot honey on top before serving warm.
