Description

A cozy, comforting bowl featuring seasoned ground beef, roasted sweet potatoes, and a drizzle of hot honey for a sweet-spicy kick.


Ingredients

  • 1 lb lean ground beef (93% preferred)
  • 2 medium sweet potatoes, peeled and diced
  • 1 avocado, sliced
  • 1 cup cottage cheese (low-fat or full-fat)
  • 1 yellow onion, diced
  • 2 tbsp olive oil
  • 1 taco seasoning packet (or 2 tbsp homemade)
  • 2 tbsp hot honey
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp cinnamon
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss the diced sweet potatoes with olive oil, paprika, garlic powder, cinnamon, salt, and pepper until well coated.
  3. Spread the sweet potatoes in a single layer on a baking sheet and roast for 40–45 minutes, or until tender and caramelized.
  4. While the sweet potatoes are roasting, heat the remaining olive oil in a skillet over medium heat. Add the diced onion and sauté until soft.
  5. Add the ground beef along with the taco seasoning to the skillet. Cook until browned, breaking it apart as it cooks.
  6. In serving bowls, layer the roasted sweet potatoes first, then top with the seasoned beef.
  7. Add avocado slices, cottage cheese, and a drizzle of hot honey on top before serving warm.
