Ingredients

- 1 pound ground turkey
- 2 medium zucchinis
- 1 tablespoon olive oil
- 1/2 medium onion
- 2 cloves garlic
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon crushed red pepper flakes
- 1/4 cup chicken broth
- 1/4 cup grated Parmesan cheese
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Peel and finely chop the onion.
- Add the chopped onion to the skillet and sauté until soft, about 3-4 minutes.
- Peel and mince the garlic cloves.
- Add minced garlic and cook for another 30 seconds.
- Crumble the ground turkey into the skillet and cook for 6-8 minutes until browned.
- Wash, trim, and slice the zucchinis into half-moon shapes.
- Add the zucchini to the skillet and cook for 4-5 minutes until slightly softened.
- Sprinkle oregano, salt, pepper, and red pepper flakes over the mixture.
- Pour chicken broth into the skillet and stir to combine.
- Reduce heat to low and simmer for 3-4 minutes.
- Sprinkle grated Parmesan cheese over the dish and stir until melted.
- Taste and adjust seasoning as desired.
- Serve immediately, garnishing with extra Parmesan if desired.

Try adding colorful peppers or fresh herbs for extra flavor.
