Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • Juice of 2 lemons
  • Salt and pepper to taste
  • 1 cup quinoa
  • 2 cups broccoli florets
  • 1 cup cherry tomatoes, halved
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Mix olive oil, minced garlic, lemon juice, salt, and pepper in a bowl.
  3. Marinate the chicken breasts in the mixture for at least 30 minutes.
  4. Cook quinoa according to package instructions.
  5. Place the marinated chicken on a baking sheet and roast for 20-25 minutes.
  6. Steam broccoli florets until tender.
  7. Slice the chicken into bite-sized pieces and assemble the bowls with quinoa, broccoli, and cherry tomatoes.
  8. Garnish with fresh parsley and serve.
