Description

A comforting and flavorful Cajun chicken and rice dish, packed with protein and topped with a creamy sauce.


Ingredients

Scale
  • 1 Tsp Salt
  • 1 Tsp Black Pepper
  • 1 Tsp Garlic Powder
  • 1 Tsp Onion Powder
  • 1 Tsp Oregano
  • 1 Tsp Thyme
  • 1 Tsp Paprika
  • 1 Tsp Chilli Powder
  • 800 g Chicken Breast (cut into halves)
  • 1.5 cajun seasoning mix
  • 2 Tsp Olive Oil
  • 25 g Grass Fed Butter for Cooking
  • 1 Medium Red Onion (chopped)
  • 45 Garlic Cloves (chopped)
  • 1/2 cajun seasoning mix
  • Fresh Parsley (for garnish)
  • 15 g Grass Fed Butter
  • 1/2 cajun seasoning mix
  • 250 ml Milk
  • 150 g Light Cream Cheese
  • 40 g Parmesan

Instructions

  1. Marinate chicken breast pieces overnight with Cajun seasoning and olive oil.
  2. Heat a pan, melt butter, and cook marinated chicken until golden brown (6-8 minutes each side).
  3. Let the chicken rest, then slice it into strips.
  4. Sauté red onion and garlic in the same pan until fragrant (2-3 minutes).
  5. Add remaining Cajun seasoning and day-old rice, stirring well.
  6. Melt additional butter in the pan, whisk in milk until warm.
  7. Stir in light cream cheese and Parmesan until smooth and creamy.
  8. Serve Cajun rice topped with sliced chicken and creamy sauce, garnished with parsley.

Notes

Marinate chicken up to two days in advance. Store leftovers in an airtight container for up to three days.
