Description

A heartwarming and creamy taco soup packed with protein, perfect for cozy dinners.


Ingredients

Scale
  • 1 lb (450g) lean ground turkey or chicken
  • 1 tablespoon olive oil
  • 1 packet taco seasoning
  • 1 (14.5 oz) can diced tomatoes
  • 1 (10 oz) can green chilies (optional)
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 cup low-sodium chicken broth
  • 8 oz cream cheese, cubed
  • 1 cup shredded cheddar cheese
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large pot over medium heat and add the ground turkey or chicken. Cook until browned.
  2. Sprinkle in the taco seasoning, garlic powder, onion powder, cumin, salt, and pepper. Stir until the meat is coated.
  3. Pour in the diced tomatoes, green chilies (if using), black beans, and chicken broth. Stir to combine.
  4. Bring the mixture to a simmer, letting the flavors meld.
  5. Add the cubed cream cheese and stir continuously until melted and creamy.
  6. Add the shredded cheddar cheese and stir until melted.
  7. Taste the soup and adjust seasoning if necessary.
  8. Serve hot, garnished with sour cream, cilantro, and lime if desired.

Notes

Store leftovers in an airtight container for up to three days. This soup can also be made-ahead and reheated.
