- 2 cups spinach, cooked and drained
- 1 cup artichoke hearts, chopped
- 2 cups cooked chicken breast, shredded
- 1 cup blended cottage cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- Preheat your oven to 350°F (175°C).
- Combine the cooked spinach, chopped artichoke hearts, shredded chicken, blended cottage cheese, 1/2 cup of mozzarella cheese, Parmesan cheese, garlic powder, onion powder, salt, and pepper in a large mixing bowl.
- Transfer the mixture to a greased casserole dish and spread it evenly.
- Top with the remaining mozzarella cheese.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
- Let it cool for a few minutes before serving.
Notes
This casserole can be prepared ahead of time. Store leftovers in an airtight container in the fridge for up to 3-4 days.
