Description

A creamy, cheesy casserole packed with protein from chicken and cottage cheese, perfect for family gatherings and meal prep.


Ingredients

  • 2 cups spinach, cooked and drained
  • 1 cup artichoke hearts, chopped
  • 2 cups cooked chicken breast, shredded
  • 1 cup blended cottage cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the cooked spinach, chopped artichoke hearts, shredded chicken, blended cottage cheese, 1/2 cup of mozzarella cheese, Parmesan cheese, garlic powder, onion powder, salt, and pepper in a large mixing bowl.
  3. Transfer the mixture to a greased casserole dish and spread it evenly.
  4. Top with the remaining mozzarella cheese.
  5. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
  6. Let it cool for a few minutes before serving.

Notes

This casserole can be prepared ahead of time. Store leftovers in an airtight container in the fridge for up to 3-4 days.
