Ingredients

  • 2 tablespoons honey
  • 3 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh herbs for garnish (like parsley or thyme)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a medium-sized bowl, combine the butter, honey, and minced garlic. Microwave for about 20-30 seconds until melted, then stir well.
  3. Toss the carrots in the honey garlic butter mixture until evenly coated.
  4. Spread the carrots out evenly on a baking sheet lined with parchment paper.
  5. Sprinkle with salt and pepper to taste.
  6. Roast in the preheated oven for about 20-25 minutes, or until tender and caramelized, turning halfway through.
  7. Remove from the oven, garnish with fresh herbs, and serve warm.

Notes

You can prep the carrots and the glaze a day in advance and store them separately in the fridge. For variations, try maple syrup instead of honey or add a pinch of red pepper flakes for heat.
