Instructions
- Preheat your oven to 400°F (200°C).
- In a medium-sized bowl, combine the butter, honey, and minced garlic. Microwave for about 20-30 seconds until melted, then stir well.
- Toss the carrots in the honey garlic butter mixture until evenly coated.
- Spread the carrots out evenly on a baking sheet lined with parchment paper.
- Sprinkle with salt and pepper to taste.
- Roast in the preheated oven for about 20-25 minutes, or until tender and caramelized, turning halfway through.
- Remove from the oven, garnish with fresh herbs, and serve warm.
Notes
You can prep the carrots and the glaze a day in advance and store them separately in the fridge. For variations, try maple syrup instead of honey or add a pinch of red pepper flakes for heat.
