Description

A delightful dish featuring marinated chicken breasts served over rice, topped with creamy avocado and a zesty lime drizzle.


Ingredients

  • 4 pieces Boneless, Skinless Chicken Breasts
  • 3 tablespoons Honey
  • 2 tablespoons Lime Juice
  • 1 tablespoon Lime Zest
  • 2 tablespoons Olive Oil
  • 2 cloves Garlic, minced
  • 1 teaspoon Cumin
  • 1 teaspoon Smoked Paprika
  • to taste Salt
  • to taste Pepper
  • 2 cups Cooked Jasmine or Basmati Rice
  • 1 medium Ripe Avocado
  • 1 tablespoon Extra Lime Juice
  • 1 tablespoon Olive Oil
  • to taste Fresh Cilantro or Parsley, for garnish
  • to taste Chili Flakes, for heat
  • 1 tablespoon Toasted Sesame Seeds, for garnish

Instructions

  1. In a mixing bowl, combine honey, lime juice, lime zest, olive oil, minced garlic, cumin, smoked paprika, salt, and pepper. Whisk together until well blended.
  2. Marinate the chicken in the mixture, covering and refrigerating for at least 30 minutes.
  3. Prepare rice according to package instructions or sauté cauliflower rice for a low-carb option.
  4. Heat a skillet over medium-high heat, add olive oil, and cook the chicken for about 5-7 minutes on each side until fully cooked.
  5. Slice the avocado and mix extra lime juice with olive oil for drizzling.
  6. Serve the chicken over rice, top with sliced avocado, drizzle with lime olive oil, and garnish with cilantro, chili flakes, and sesame seeds.

Notes

Marinate longer for better flavor. Use fresh lime juice for the best results. Leftovers can be stored for up to 3 days.
