Instructions
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together the flour, baking powder, salt, and sugar until well combined.
- Add the cold, cubed butter to the flour mixture. Using your fingers or a pastry cutter, blend the butter until the mixture resembles coarse crumbs.
- Gently fold in the blueberries, being careful not to crush them.
- Pour in the buttermilk and vanilla extract, mixing gently until just combined. The dough will be shaggy—do not overmix!
- Turn the dough onto a floured surface and pat it into a rectangle that is about 1-inch thick.
- Use a biscuit cutter or knife to cut out your biscuits, placing them on the prepared baking sheet.
- Bake in the preheated oven for 15–18 minutes or until the tops are golden brown.
- Enjoy warm with butter, honey, or powdered sugar.
