Description

Ingredients

  • 3/4 cup buttermilk (or milk + 1 tbsp vinegar)
  • 1 cup fresh or frozen blueberries
  • 1 teaspoon vanilla extract (optional)

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, baking powder, salt, and sugar until well combined.
  3. Add the cold, cubed butter to the flour mixture. Using your fingers or a pastry cutter, blend the butter until the mixture resembles coarse crumbs.
  4. Gently fold in the blueberries, being careful not to crush them.
  5. Pour in the buttermilk and vanilla extract, mixing gently until just combined. The dough will be shaggy—do not overmix!
  6. Turn the dough onto a floured surface and pat it into a rectangle that is about 1-inch thick.
  7. Use a biscuit cutter or knife to cut out your biscuits, placing them on the prepared baking sheet.
  8. Bake in the preheated oven for 15–18 minutes or until the tops are golden brown.
  9. Enjoy warm with butter, honey, or powdered sugar.
