Ingredients

  • 1 box Strawberry Cake Mix
  • 1.5 cups Fresh or Frozen Strawberries
  • 1 cup White Chocolate Chips or Chunks
  • 1 cup Sweetened Shredded Coconut
  • 0.5 cup Chopped Pecans or Walnuts
  • 8 oz Cream Cheese
  • 0.5 cup Unsalted Butter
  • 2.5 cups Powdered Sugar
  • 1 teaspoon Vanilla Extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish with butter or non-stick spray.
  2. Prepare the strawberry cake mix according to the package instructions, folding in the strawberries, white chocolate chips, and shredded coconut.
  3. Beat the cream cheese and unsalted butter together until creamy, then add powdered sugar and vanilla.
  4. Spread half of the cake batter in the dish, top with cream cheese mixture, then add the remaining batter.
  5. Sprinkle with chopped nuts before baking.
  6. Bake for approximately 35–40 minutes or until a toothpick comes out clean.
  7. Cool for at least 20 minutes before slicing and serving.

Notes

This cake can be made a day in advance and stored in the fridge. For neat slices, use a sharp knife dipped in hot water.
