Instructions

  1. Heat a drizzle of olive oil in a large pot over medium heat.
  2. Add the diced onion and minced garlic, sautéing until translucent and fragrant (about 3-4 minutes).
  3. Add the Italian sausage, breaking it up and cooking until browned (about 5-7 minutes).
  4. Pour in vegetable broth and diced tomatoes, stirring to combine, and bring to a gentle simmer.
  5. Add pasta and Italian seasoning, cooking according to package instructions (8-10 minutes).
  6. Fold in fresh spinach just before serving, allowing it to wilt (about 1 minute).
