Description

A cozy weeknight dinner combining tender chicken with a deliciously juicy peach and jalapeño sauce.


Ingredients

  • 4 chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 jalapeños, diced
  • 3 peaches, diced
  • 1/4 cup honey
  • 1/4 cup apple cider vinegar
  • 1/4 cup water
  • 1 tablespoon cornstarch

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Season the chicken breasts with salt and black pepper on both sides.
  3. Heat the olive oil in a large oven-safe skillet over medium-high heat.
  4. Add the seasoned chicken breasts and sear for 3-4 minutes on each side until golden brown.
  5. Remove the chicken from the skillet and set aside.
  6. Add the diced jalapeños and peaches to the same skillet.
  7. Cook for 2-3 minutes until slightly softened.
  8. Whisk together the honey, apple cider vinegar, water, and cornstarch in a small bowl until smooth.
  9. Pour the honey mixture over the jalapeños and peaches, stirring well to combine, and bring to a gentle simmer.
  10. Return the chicken breasts to the skillet, spooning some of the sauce over the top.
  11. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until cooked through.
  12. Remove from the oven and let the chicken rest for a few minutes before serving.
  13. Serve hot, spooning the sauce over the chicken. Enjoy!

Notes

Make the jalapeño and peach mixture a day in advance for convenience. Leftovers can be stored in an airtight container for up to 3 days.
