Description

A comforting creamy pasta dish that combines turkey bacon and colorful vegetables, perfect for family dinners.


Ingredients

  • 8 ounces of pasta (penne, rotini, or fusilli)
  • 6 slices turkey bacon, chopped
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 2 cups spinach (fresh or frozen)
  • 2 cups vegetable broth
  • 1 cup heavy cream or dairy-free alternative
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil leaves for garnish (optional)

Instructions

  1. In a large pot over medium heat, cook the chopped turkey bacon until crispy. Remove from the pot and set aside on paper towels.
  2. In the same pot, add the diced onion and sauté for 2-3 minutes until fragrant. Add minced garlic and sauté for another 30 seconds.
  3. Stir in the pasta, halved cherry tomatoes, vegetable broth, salt, and pepper. Bring to a gentle boil then reduce to a simmer.
  4. Simmer for about 10-12 minutes, stirring occasionally, until the pasta absorbs most of the liquid and is al dente.
  5. Once cooked, stir in the heavy cream and Parmesan cheese. Add spinach and fold gently until wilted.
  6. Serve warm, topped with turkey bacon and fresh basil leaves.
