- 8 ounces of pasta (penne, rotini, or fusilli)
- 6 slices turkey bacon, chopped
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 2 cups spinach (fresh or frozen)
- 2 cups vegetable broth
- 1 cup heavy cream or dairy-free alternative
- 1 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh basil leaves for garnish (optional)
Instructions
- In a large pot over medium heat, cook the chopped turkey bacon until crispy. Remove from the pot and set aside on paper towels.
- In the same pot, add the diced onion and sauté for 2-3 minutes until fragrant. Add minced garlic and sauté for another 30 seconds.
- Stir in the pasta, halved cherry tomatoes, vegetable broth, salt, and pepper. Bring to a gentle boil then reduce to a simmer.
- Simmer for about 10-12 minutes, stirring occasionally, until the pasta absorbs most of the liquid and is al dente.
- Once cooked, stir in the heavy cream and Parmesan cheese. Add spinach and fold gently until wilted.
- Serve warm, topped with turkey bacon and fresh basil leaves.
