Description

A cozy and comforting dish featuring creamy sauce, tender chicken, and bowtie pasta, all infused with bright lemon zest.


Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 12 oz bowtie (farfalle) pasta
  • 2 cups broccoli florets
  • 1 tsp Cajun seasoning
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • Salt to taste
  • Black pepper to taste
  • 1/2 tsp crushed red pepper flakes (optional)
  • 1 tsp Dijon mustard
  • Juice and zest of 1 lemon
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh chives, chopped
  • 2 tbsp olive oil
  • 6 tbsp unsalted butter
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup reserved pasta water

Instructions

  1. Prepare a large pot of salted water and boil it. Cook the bowtie pasta according to package instructions until al dente. In the last 3 minutes of cooking, add the broccoli florets. Reserve 1/2 cup of pasta water, then drain the pasta and broccoli.
  2. Warm 2 tablespoons of olive oil in a large skillet over medium heat. Season the chicken pieces with salt, black pepper, Cajun seasoning, garlic powder, and smoked paprika. Add the seasoned chicken to the skillet when the oil is hot. Cook for about 6-7 minutes, stirring occasionally, until the chicken is golden brown and cooked through.
  3. Reduce the heat to low and add the unsalted butter to the skillet with the chicken. As the butter melts, add the Dijon mustard, lemon juice, lemon zest, parsley, chives, and crushed red pepper flakes (if using). Stir well to combine.
  4. Fold the cooked pasta and broccoli into the skillet, coating them in the creamy sauce. Gradually stir in reserved pasta water to reach your desired sauce consistency. Add the grated Parmesan cheese, mixing well until creamy.
  5. Serve warm, garnished with extra Parmesan cheese and fresh herbs. Enjoy!

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat on stovetop with a splash of water.
