Description

A hearty and comforting Loaded Potato Taco Bowl, filled with seasoned ground turkey, black beans, and topped with fresh ingredients for a delicious weeknight dinner.


Ingredients

  • 4 large potatoes
  • 1 cup cooked and seasoned ground turkey
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, frozen or fresh
  • 1 cup salsa
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 avocado, diced
  • 1 teaspoon taco seasoning
  • Salt and pepper to taste
  • Chopped cilantro for garnish

Instructions

  1. Preheat the oven to 400°F (200°C). Wash the potatoes thoroughly and pierce them with a fork to allow steam to escape. Bake them for about 45 minutes or until they feel tender to the touch.
  2. Prepare the taco filling. In a skillet over medium heat, combine the cooked ground turkey, black beans, corn, salsa, taco seasoning, salt, and pepper. Cook until everything is heated through and flavors meld beautifully.
  3. Once the potatoes are soft and golden, remove them from the oven. Let them cool slightly, then cut them in half. Scoop out some of the insides to make room for the filling.
  4. Generously fill each potato half with the taco mixture, making sure to mound it high. Top with shredded cheese and return to the oven for an additional 10 minutes, or until the cheese is melted and bubbly.
  5. Remove from the oven and add diced avocado and a sprinkle of chopped cilantro. Serve warm.

Notes

Customize with different toppings or substitute ingredients as you like. Can make ahead and store filling in the fridge.
