- 1 pound Chicken breasts, cut into uniform pieces
- 2 tablespoons Extra virgin olive oil
- 1 medium Zucchini
- 1 large Red bell pepper
- 1 medium Red onion
- 1 cup Cherry tomatoes
- 1/2 cup Kalamata olives
- 2 cloves Garlic, minced
- 1/4 cup Sun-dried tomatoes
- 1 teaspoon Dried oregano
- 1 teaspoon Dried basil
- 1 teaspoon Dried thyme
- 2 tablespoons Lemon juice
- 1/2 cup Feta cheese
- 1/4 cup Fresh parsley, for garnish
Instructions
- Prepare the Ingredients: Cut chicken and chop vegetables into uniform pieces.
- Heat the Pan: In a large skillet, heat olive oil over medium-high until shimmering.
- Sauté the Chicken: Add chicken, season with salt and pepper, and cook until golden brown, about 5-7 minutes.
- Add the Veggies: Stir in red onion, zucchini, and red bell pepper. Sauté for 3-4 minutes until softened.
- Mix in the Flavors: Add garlic, cherry tomatoes, sun-dried tomatoes, olives, oregano, basil, and thyme. Simmer for 2-3 minutes.
- Finish with Lemon and Feta: Drizzle with lemon juice and sprinkle feta over the top, mixing gently.
- Garnish & Serve: Transfer to a serving bowl, garnish with parsley, and serve warm.
