Description

A delightful 30-minute stir fry bursting with Mediterranean flavors, featuring tender chicken and a medley of vibrant vegetables.


Ingredients

  • 1 pound Chicken breasts, cut into uniform pieces
  • 2 tablespoons Extra virgin olive oil
  • 1 medium Zucchini
  • 1 large Red bell pepper
  • 1 medium Red onion
  • 1 cup Cherry tomatoes
  • 1/2 cup Kalamata olives
  • 2 cloves Garlic, minced
  • 1/4 cup Sun-dried tomatoes
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • 1 teaspoon Dried thyme
  • 2 tablespoons Lemon juice
  • 1/2 cup Feta cheese
  • 1/4 cup Fresh parsley, for garnish

Instructions

  1. Prepare the Ingredients: Cut chicken and chop vegetables into uniform pieces.
  2. Heat the Pan: In a large skillet, heat olive oil over medium-high until shimmering.
  3. Sauté the Chicken: Add chicken, season with salt and pepper, and cook until golden brown, about 5-7 minutes.
  4. Add the Veggies: Stir in red onion, zucchini, and red bell pepper. Sauté for 3-4 minutes until softened.
  5. Mix in the Flavors: Add garlic, cherry tomatoes, sun-dried tomatoes, olives, oregano, basil, and thyme. Simmer for 2-3 minutes.
  6. Finish with Lemon and Feta: Drizzle with lemon juice and sprinkle feta over the top, mixing gently.
  7. Garnish & Serve: Transfer to a serving bowl, garnish with parsley, and serve warm.
