- 60 ml lemon juice
- 30 ml olive oil
- 3 cloves garlic, minced
- 100 g feta cheese, crumbled
- 250 g cherry tomatoes, halved
- 1 medium cucumber, diced
- 1 small red onion, thinly sliced
- 30 g fresh parsley, chopped
- 150 g quinoa, uncooked
- Salt to taste

Instructions
- Cook the quinoa according to package instructions.
- Preheat your grill or skillet over medium heat.
- In a medium bowl, mix the lemon juice, olive oil, minced garlic, salt, and pepper.
- Place the chicken breasts in the marinade and let them marinate for at least 30 minutes.
- Grill or cook the chicken until fully cooked, about 6-7 minutes per side.
- Let the chicken rest for a few minutes before slicing into strips.
- In a large bowl, combine the cooked quinoa, halved cherry tomatoes, diced cucumber, thinly sliced red onion, and chopped parsley. Toss together.
