Description

A cozy Mediterranean Steak Bowl packed with vibrant flavors, fresh ingredients, and delicious protein-rich quinoa, perfect for a quick weeknight dinner.

Ingredients

Scale
  • 1 lb steak (sirloin or your choice)
  • 1 cup cooked quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, diced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup olives, pitted and halved
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a skillet over medium-high heat, cook your steak until it reaches your desired doneness—a perfect rosy medium-rare will add tenderness to your bowl! Once done, let it rest before slicing.
  2. While your steak rests, in a large bowl, combine cooked quinoa, halved cherry tomatoes, diced cucumber, diced red onion, crumbled feta cheese, and halved olives.
  3. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Pour this zesty dressing over the salad mixture and gently toss to combine, allowing the flavors to mingle harmoniously.
  4. Serve the quinoa salad topped with beautifully sliced steak, and finish with a sprinkle of fresh parsley for a pop of color and freshness.

Notes

For meal prep, marinate the steak a few hours or overnight for deeper flavor. Use leftover steak in sandwiches or salads. Keep components separate until ready to serve to prevent sogginess. Slice against the grain for tender bites.
