- 1 cup mushrooms, sliced
- 1 cup heavy cream
- 2 tablespoons olive oil
- 2 cloves garlic, minced

Instructions
- In a large skillet, heat the olive oil over medium heat until shimmering.
- Season the chicken breasts with salt and pepper and add them to the skillet. Cook for about 5-7 minutes on each side until golden brown and cooked through, then remove and set aside.
- Add the minced garlic and sliced mushrooms to the same skillet; sauté until mushrooms are tender.
- Pour in the heavy cream and sprinkle in the thyme. Stir and let the sauce simmer until it thickens.
- Return the chicken to the skillet, coating it with the creamy sauce before serving.
Notes
Make the sauce ahead of time to save time during hectic weeknights. You can substitute heavy cream with half-and-half or coconut milk.
