- 1.5 cups rolled oats (processed finely in a food processor to make oat flour)
- 1/4 cup maple syrup
- 1 cup chocolate chips
- 1 tsp coconut oil (optional)
Instructions
- Make oat flour by blending oats in a high-speed blender or food processor until they become a fine oat flour.
- Combine peanut butter and maple syrup in a medium-sized microwave-safe bowl, heat for 40-60 seconds, and stir until creamy.
- Mix in oat flour slowly, adjusting with more maple syrup or peanut butter if too dry.
- Prepare a muffin pan by lining with cupcake liners or using a silicone muffin pan.
- Fill each muffin cup evenly with the mixture and press down to compact.
- Melt chocolate topping by combining chocolate chips and coconut oil in a microwave-safe bowl, heating in 30-second increments until smooth.
- Top each muffin cavity with melted chocolate and optional toppings.
- Chill in the refrigerator for 2-3 hours to set, then remove from the pan.
