Description

Delicious no bake peanut butter oat cups that are sweet, nutty, and perfect for satisfying cravings without a long baking session.


Ingredients

  • 1.5 cups peanut butter
  • 1.5 cups rolled oats (processed finely in a food processor to make oat flour)
  • 1/4 cup maple syrup
  • 1 cup chocolate chips
  • 1 tsp coconut oil (optional)

Instructions

  1. Make oat flour by blending oats in a high-speed blender or food processor until they become a fine oat flour.
  2. Combine peanut butter and maple syrup in a medium-sized microwave-safe bowl, heat for 40-60 seconds, and stir until creamy.
  3. Mix in oat flour slowly, adjusting with more maple syrup or peanut butter if too dry.
  4. Prepare a muffin pan by lining with cupcake liners or using a silicone muffin pan.
  5. Fill each muffin cup evenly with the mixture and press down to compact.
  6. Melt chocolate topping by combining chocolate chips and coconut oil in a microwave-safe bowl, heating in 30-second increments until smooth.
  7. Top each muffin cavity with melted chocolate and optional toppings.
  8. Chill in the refrigerator for 2-3 hours to set, then remove from the pan.
